Dahlias

Dahlia makes gorgeous edible flowers and tubers and are a traditional Aztec food crop called Cocoxochitl in the Nahuatl language. Cocoxochitl (pronounced "coco-so-cheel") is the original Aztec name for the dahlia.

These flowers bloom at the peak of our farm season and bring great joy to our farm crew and family. They are sacred to us because they invoke gratitude and forgiveness. They harvest the energy of the sun and they express a vivaciousness, elegance and creativity of the Divine. Over the years they’ve come to represent the spirit of harvest time at Claudine Farms and our triumph over challenges.

Most edible varieties are bland, but we are looking to identify heirloom varieties can taste like spicy apples, carrots, or celery root. Dahlia fries, breads (similar to zuchini bread) and pureed soup are some. The tubers are a rich source of potassium with 100 grams coming in at 1110mg, providing you with 32% of the recommended daily value.
